In an article from Nippon.com (which I highly recommend subscribing to their newsletter!), they delve into one of Japan's renowned dishes: Okonomiyaki.
They draw parallels, but also differences between the two-leading genres: Kansai, and Hiroshima. On a personal level, I’ve had both, and I prefer the Hiroshima version, sorry not sorry.

Kansai-Style Okonomiyaki
Ingredients are blended into the batter, resulting in a unified pancake. Often, diners cook it themselves at their tables on a teppanyaki plate.
Hiroshima-Style Okonomiyaki
The layered pancake is flipped, placing the batter on top to steam-bake the ingredients underneath. Additional layers of stir-fried noodles and eggs are then added.
